Mexican (Inspired) Night

I've never been to Mexico and I've no idea whether this even remotely resembles anything they eat there. But it's colourful and have some exotic ingredients typical in the Mexican kitchen so I guess it's as Mexican as Chicken Tikka Masala is Indian... Anyway, when it comes to taste it's absolutely delicious. Venga, pruebalo!
Ingredients:
Skewers:
2 tbsp olive oil
2 tsp ground cumin
salt pepper
500g beef
1 sweet potato
Potato/Pepper salad:
4 big potatoes
1 big red pepper or 2 small ones
1 tsp ground coriander seeds
1 tsp ground cumin
Salt, pepper
Olive oil
1-2 cloves of garlic
Fresh cilantro
Cheddar cheese
Chimmichuri sauce:
1 jalapeño
2 cloves of garlic
1 handfull of fresh cilantro
1 handful of fresh parsley
1/2 tsp of hot paprika
1,25dl olive oil
3 tbls redwine vinegar
salt and pepper.

For marinating the meat, mix the oil with ground cumin, some salt and pepper.

Cut the beef into 2 cm cubes.

Marinate a couple of hours.

A sweet potato! Peel it and cut it into 2 cm cubes.

Mix them with olive oil, salt, pepper and ground cumin. Roast them in the oven 20min aprx. They need to be fork tender.

For the pepper and potato salad, cut a couple of potatoes into thin wedges, cut a red pepper into big chunks.

Season with ground coriander seeds, ground cumin, salt pepper, olive oil, and roughly cut garlic. Bake in oven till potatoes are done (aprx. 20-30 min).
Prepare the chimmichuri sauce: Blend all the ingredients. If you want it more rustic you can chop it all finely or use a mortar.

When the potatoes are done, add some fresh cilantro and some cheddar cheese. Taste for salt.

Prepare the skewers by putting a cube of sweet potato for every piece of meat. Grill or fry until meat is done.

Andalé! Serve with sauce.
