Bruschetta - When being fascist about quality is a good thing

Bruschetta - biting into the Italian country side. Ok, there's only one secret to this recipe: Superior quality products. Should you only have canned tomatoes, some dried basil from another decade, engine oil and toast bread, well don't even bother. Extra virgin oil, plumb ripe tomatoes, fresh basil leaves, expensive balsamic vinegar, seasalt and a clove of garlic are the only acceptable ingredients. The bread can be day-old as it is going to be toasted.

The ingredients.

Chop tomatoes finely, add 1 clove of crushed garlic.

A pinch of salt.

Finely cut your basil by roling the leaves together. Add to tomato along with a couple of spoonfuls of olive oil.

Some balsamic vinegar to taste.

Toast your bread lightly, put the tomatoes on top.

Drip any juices from tomatoes over to soak the bread.

Add some slices of buffalo mozarella (optional, but recomendable).

Toast in oven til cheese melts. Bite that!
